Such a sensor may be a vertical wire mounted on an insulator connected to the GPIO input with a high value pull-up resistor (of the order of 100k or more). Ground GND of the ESP board. When the water level reaches the end of the wire, it closes the circuit and reduces the voltage at the GPIO input from logical one to logical zero.

I have a micropython project that will use that soon. There is a library from the manufacturer but my experience with micropython libraries from manufacturers is that I normally have to completely re-write them. The arduino library is normally good.
